A whole steer includes every steak, roast and brisket the animal yields, all the ground beef, soup bones and tallow, with a full custom cut sheet built with our butcher. USDA-inspected harvest, dry-aging, cutting to your cut sheet, vacuum-sealing and freezing are all included in the flat price.

    Splitting bulk beef between families

A whole steer or a half is a lot of beef for one household. Many buyers split: a half divides neatly into two quarters, and a whole into two halves or four quarters. Tell us at checkout and we'll pack and label the beef in separate sets so nobody has to divide it on the driveway.

Picking up at the ranch in Georgetown

Ranch pickup in Georgetown, TX is free and available every harvest week. Your beef comes off the truck from the processor already vacuum-sealed and frozen, so bring coolers or a vehicle with room — a whole steer needs about 12–14 cu ft (large chest freezer) of freezer space at home.

Prefer delivery? We hand-deliver across Georgetown and the rest of Greater Austin and Dallas-Fort Worth for a small flat fee shown at checkout.

How to claim a bulk share

Pick an open steer on the available-steers page, choose your share size, and pay once (or reserve a half or whole with a deposit). We text you to build your cut sheet with our butcher, the steer is harvested on its listed date, and your beef is dry-aged, cut, sealed and frozen before pickup or delivery two to three weeks after harvest week.
