Half Cow Price in Texas: What a Half Beef Really Costs

Half-cow prices in Texas are hard to compare because most ranches quote a hanging-weight rate and bill processing separately. Here's what ours costs, all in, and how to check any quote you get against it.

Grass-fed Wagyu beef cuts on a ranch cutting board at Long Road Ranch

Our half cow is $3,250, one time, for 180–220 lbs of finished, packaged grass-fed Wagyu — about $16.25/lb at midpoint yield. Harvest, dry-aging, cutting, vacuum-sealing and freezing are included. You can reserve it with a 25% deposit ($813) and pay the balance before processing.

The three numbers in every half-cow quote

Most Texas half-cow ads quote a price per pound of hanging weight — the weight of the carcass half after harvest, before it's cut. That's the first number.

The second is processing: a kill fee plus per-pound charges for cutting, wrapping and any extras, usually invoiced separately by the processor. The third is what actually reaches your freezer: after cutting and trimming you keep roughly 55–65% of hanging weight.

To compare quotes fairly, add the hanging-weight price and every processing charge, then divide by finished pounds. That's the only number that matches ours: $3,250 for 180–220 lbs, about $16.25/lb.

Every share size, priced the same way

A half is four of the eight units we split each steer into. Bigger shares cost less per pound because the cutting and packing work is shared across more beef.

Pay $3,250 in full, or reserve with a 25% deposit ($813) and pay the balance before your steer is processed. Deposits are refundable until cut sheets are collected.

Affirm and Klarna are available at checkout if you'd rather spread the cost out. Two households can also split a half into two quarters — tell us at checkout and we'll pack it in two labeled sets.
