A Week of Meal Prep with Two Pounds of Wagyu Ground Beef

How to turn two pounds of ground Wagyu from your beef share into five family-friendly weeknight dinners.

Two pounds of ground Wagyu from your monthly Long Road Ranch box can anchor an entire week of weeknight dinners if you batch-cook smart on Sunday. Here's a week's worth of meals built around a single Sunday afternoon of prep.

Sunday prep (90 minutes total): Brown one pound of ground Wagyu over medium heat in a large skillet — render slowly so the fat coats the meat instead of pooling. Set aside in a glass container. In the same pan, brown a second pound with a chopped onion, two cloves of garlic, a teaspoon of cumin, and a teaspoon of chili powder for taco meat. Set aside in a second container. Refrigerate both.

Monday — Bolognese pasta. Take one cup of the plain browned beef. Add to a skillet with two cups of crushed tomatoes, a splash of red wine if you have it, a teaspoon of dried oregano, salt, and pepper. Simmer 15 minutes. Toss with a pound of cooked rigatoni. Top with grated Parmesan. Feeds four.

Tuesday — Tacos. Reheat the seasoned taco meat with a splash of water. Serve with warm corn tortillas, fresh salsa, chopped white onion, cilantro, lime wedges, and a small bowl of crumbled queso fresco. Feeds four with leftovers.

Wednesday — Wagyu chili. In a large pot, sauté half an onion. Add the rest of the seasoned taco meat, two cans of black beans (rinsed), a can of fire-roasted tomatoes, a tablespoon of chili powder, and a cup of beef broth. Simmer 25 minutes. Serve over rice or with cornbread. Feeds four.

Thursday — Shepherd's pie shortcut. Take a cup of the plain browned beef. Mix with a cup of frozen mixed vegetables and a cup of beef gravy (homemade with tallow and flour, or a quality jarred version). Spread in a baking dish, top with mashed potatoes (use Wagyu tallow in the mash), and broil five minutes until the top is golden. Feeds four.

Friday — Wagyu fried rice. Heat a tablespoon of Wagyu tallow in a wok or large skillet. Scramble two eggs and set aside. Add the last of the plain browned beef, a cup of frozen peas and carrots, two cups of cold day-old rice, three tablespoons of soy sauce, and a teaspoon of toasted sesame oil. Stir-fry over high heat for five minutes. Fold in the eggs. Feeds four.

Total dinners: five family meals, with leftovers most nights. Total active cooking time on weeknights: under twenty minutes per dinner.

The bigger lesson: a monthly Wagyu box doesn't replace your grocery store. It anchors your protein for the week and lets the rest of the meal come from cheap pantry items, vegetables, and a lot less weeknight planning. The ground beef alone earns its keep five times a week.
