Method
- 1
Salt steaks 1 hour ahead. Pat dry, oil lightly, pepper just before grilling.
- 2
Heat grill to 600°F+ on the hot side, leave one zone unlit for safety.
- 3
Place steaks at a 45° angle to the grates. After 90 seconds, rotate 90° for crosshatch marks. 90 more seconds.
- 4
Flip. Repeat the rotation. If flare-ups get out of control, slide to the cool zone for 30 seconds.
- 5
Pull at 125°F. Rest on a board with a thin smear of Wagyu tallow on top — it'll melt into the steak.
- 6
Pairs perfectly with smoked brisket leftovers for a Texas surf-and-turf night.
Get this cut on repeat.
